Default Date/Time Field Autopopulation Question

I have a word form "Call In Authorization". Currently the form autopopulates the date and time fields. The supervisor fills out the form and then forwards it via email to the guards to process. I do NOT want the form to autopopulate a different date/time when the guards open it. Is this possible? Thanks!
