I created a form in microsoft word and it was perfect, just like a wanted it. I saved it and closed it. I went to open it later and there are symbols appearing that I don't understand. Some of them look like the Paragraph symbol ¶
at the end of lines. Then there is another symbol I am not familiar with.

My question is why are these appearing and how do i get rid of them?

Have you tried clicking on the ¶ symbol on the Ribbon's 'Home' tab?
