In Word 2010 (and 2007), you can't modify outline numbering via the Modify Style dialog box. Instead, do the following: Place the insertion point in the first level 1 paragraph of the document (with heading numbering, this implies the first Heading 1 paragraph). Click Home tab | Multilevel List | Define New Multilevel List (yes, it doesn't make sense that the option is called "define new"). Then make the desired changes to the appropriate numbering levels.
