2 pst files

I managed to follow the instructions to back up, which I could have done manually, like I did with old pc. The main point is restoring these backups in future, when there are 2 PST files. Currently we Home/Open/"Open Outlook Data File", but which pst do we choose, and what do we do with the other one?
