Default Are there Settings for parts to a document?

I want to create a document containing my financial details such as bank account numbers, share portfolios etc and current balance for each.

I would like to be able to print that document containing all the details EXCEPT the amounts/current balance eg to print it to go say with my will.

I could go through the document either removing each amount or making them blurred but wondered if there are settings which can turn them all off or on at will and still retain the values.
