Last updated fieldWord 2019
Hi. I have tried quick parts -> DocProperty -> LastSavedTime. Updating a document doesn't change the value. The value is the date and time I added it to the document

If you added the SaveDate field, you can update it by closing and re-opening the document. Or you can update the field by clicking inside it and pressing F9 (FN+F9 on some keyboards).
