If you click on your own 'Table of Figures' paragraph break, you can insert tab-stops & change the alignment via the Ruler in exactly the same way as you'd do anywhere else in the document. You can then right-click and choose Styles>Update Table of Figures to Match Selection.

As for copying the Style from the demo document, you could do that (in your own document) via Developer|Document Template>Templates>Organizer to copy the Style from the 'Figures.docx' file into your document. You still risk ending up with a format that doesn't quite match what you want to do, though.
