I would like to change the standard location of the standard reference-file sources.xml. Is this possible, using a setting in the administrative template for Word 2010?

You can point your document at a different sources file by going to References > Manage Sources > Browse...

I would like to change the standard source in order to allow acces to the same sources.xml for multiple users, without browsing to the source every time they need to add a reference.

AFAIK, there is no setting available for changing the path to the Sources.xml file. In any event, if you want all users to use the same list of sources, you (or they) can copy a suitable Sources.xml file to:
Code:
C:\Users\%Username%\AppData\Roaming\Microsoft\Bibliography\Sources.xml
