Apply the List Bullet style to a text paragraph in your document. Format it with the desired bullet format (using the commands in the Paragraph group on the Home tab). When you are done, update the style to match the selection (you can do that via the Styles pane which can be displayed using Ctrl+Alt+Shift+S).

If you want to adjust the indentation around the bullet symbol, you will have to click the bullet symbol to select it and then right-click and choose Adjust List Indents.
