Default Turning spelling checker back on


I'm using Word 2007 and I have a file that I use daily, but because it had gotten so large Word gave me that message that there are too many spelling errors so it is turning off the on the fly spelling checker. I've now reduced the size of the document, but the red underlining of misspells isn't back. Is there any way to turn it back on? Also is there a way to get Word to not do that, to not turn off the proof reading if there are many mistakes in the document?
