With Change Tracking on, deleting a table row should show it as deleted with a shaded background in either 'Show markup' view, with a track-change bar in the margin. Even switching Change Tracking off after deleting the row won't change the view - only switching to 'Original' or 'Final' view will do that. The loss of the track-change bar in the margin when switching to 'Original' or 'Final' view is normal.
