It is possible to link a shotcut key to a specific font. In case no font is chosen, just leaving the box to "normal text, word automatically assigns SimSun-font. Why?

Your request doesn't appear to make much sense. Word formats documents using styles, by default the normal style. You can set the styles you use to use any font you like. You can assign a keyboard shortcut to a style if you wish, or you can click the QuickStyle access toolbar.
