Stupid question, but what do you mean by non-sensitive?
On the file form, I tried getting them to accept a PDF with form fields, but they want to be able to edit content in the future if they need to...they're not the most computer-savvy people around. Basically all they needed me for was compiling ALL their content into one typed up and formatted file...which they now want me to retype.

Not stupid at all – we should always ask when we aren't sure. In this context, it means 'information your company would not want strangers to see'.
Now that sounds like a really satisfying task :-}
