When you embed an image into a Word document, all the EXIF data gets deleted if Word's image compression was switched on when the image was inserted (or if it has been applied since insertion). If either of those conditions applies, there won't be any date/time info to retrieve. Otherwise, simply change the file's extension to .zip (don't try to convert the document to a zip file), then extract the image file from the zip archive. All the EXIF data will be available.
