Click File tab | Options | Advanced. Under "Editing options," clear the "Automatically switch keyboard to match the language of surrounding text" option.

hi Stefan. thanks for reply. but my problem is the other way round so this doesn´t solve it. I want to use my custom keyboard layout but with german spelling.

I don't have multiple input languages installed myself, so I can't really test this myself... However, the following comes to mind: Have you cleared the "Detect language automatically" option in the Language dialog box (Review tab | Language | Set Proofing Language)?

Sorry to bump an old thread, but I have this exact same problem, and no, clearing "Detect language automatically" does not help. I need to be able to switch between keyboards but keep my LANGUAGE the same, and it is extremely annoying. Ex. if I switch to US International keyboard, Word automatically sets the language to English, and even if I switch back into a non-English language and continue typing in that language, the Word proofing language stays English unless I manually change it. :|

There is an option somewhere that links keyboard layout (input language) to the proofing language, but since I always use only one keyboard layout, I haven't seen it. See http://homepage.swissonline.ch/cindymeister/LangFmt.htm which was written for older versions of Word but hopefully can give you a clue.
