Word tables don't have any automatic cell formats. If you want a currency format, you have to apply it to each cell yourself. Other than typing the currency format manually, you could use a macro to format the cells, perhaps attached to a content control on-exit macro (but only if you use content controls) or a macrobutton field, or if you use formfields in a document with forms protection.
