Uninstalling Outlook 2007

Is it possible to uninstall JUST Outlook or do I have to do a full uninstall and then custom re-install?

Throw your installation cd in (or run your setup from wherever it was you installed from), and seleect 'modify' at the start of setup.

This will allow you to customize your installation of the office suite, selecting only the components that you desire, outlook, access, word etc.
