UK regional settings won't be affecting it - some European ones could, though, due to differences in separator characters. UK, US, Canada & Australia should all be OK.
If you could attach a copy of your mailmerge main document to a post with some representative data (delete anything sensitive), I'll take a look at it. You do this via the paperclip symbol on the 'Go Advanced' tab at the bottom of this screen.

Only managed to attach it to this reply. Data is pulled through as a full date
This is the output: 1. The Landlord lets to the Tenant the residential premises known as Unit 3, Technium, 2 Kings Road, SWANSEA, SA1 8PJ (“the Premises”) 2. The Tenancy will be for a term from and including the 14 Oct 2014 (“the Commencement Date”) to and including 13 Oct 2015 (“the Expiration Date”). 3.
