Have you checked Excel Options>Advanced>Display? This will tell Excel the number of recently used documents to display. If there's a number entered, check to see if other MRU lists from other applications are affected. If they are, it could be your anti-virus software deleting them. I know I can set mine to delete those lists if I chose to do so. If Excel is the only application affected, then I'm not sure what happened.
