Default Issues with Microsoft Word Form Fields

I have spent a great deal of time trying to figure out this issue and searching out on the web, what I am doing wrong, before finally joining this forum to ask my question-- so I apologize in advance if this is a simple thing, but I really need to figure this out-- so here goes.

I have created a form in Word, that has form fields. The fields are text with an unlimited amount of characters specified. The problem is that when you enter text into the locked field it only shows the first line of text-- UNLESS you unlock the form or kind of "dance around" in the field with back spacing etc. The fields themselves are inside of a table.

Obviously I would like for users to be able to enter text in the form fields without having to unlock it to make sure they can see what they entered is correctly typed! I can't for the life of me figure out why this is happening. It doesn't happen in other places, so I am completely baffled by what I might have done to create this issue.

Any help would be greatly appreciated.
