Default Creating templates for dummies in Word 2010

Prior to Word 2010, one could create custom toolbars in Word. These were a blessing if you had relatively novice users using your templates. You could simply present a toolbar with the list of mandatory styles you only wanted used in documents.



However, now customised toolbars aren't allowed. I've been trying to figure out the besty way of presenting _only_ a small set of styles to end-users. Word 2010 doesn't allow me to create a custom toolbar or menu with those styles, Also, it doesn't allow me to delete the inbuilt styles I don't want them to see, and also doesn't allow me to hide the manual formatting buttons.

Any help/advice appreciated,
