If you've used Word's Styles correctly, you should be able to do this just by modifying the relevant Styles. Further, if you modify these attributes in the underlying template, then go to Word Options|Addins > Manage > Templates and check the 'Automatically update styles on open' option, those changes will be applied to the documents when they are next opened.
