Default Font Setting not Affecting All Levels of Multilevel List

I can certainly change the styles individually but I’d like to understand how to craft a document that can be globally altered with a revision to the default font. Any idea why changing the default font doesn’t revise these two styles?

This is likely style inheritance or cascading as mentioned by Italophile.
