A "template" in Word is not just a model document, but rather a different file type.
The default behavior for a template, when double-clicked on, is to create a new unnamed document with the same layout and text as the template. Please see: Templates in Microsoft Word Are you using the desktop application in Office 2021 or the deskttop application in Microsoft 365?
