Many factors are at play here. As Andrew (Guessed) said, typing speed may be one such factor.
However, I vaguely recall that there was a specific issue that caused Undo to do only one character at a time. I don't remember the details at the moment, but I will post back when/if I can find out more. :-)

It's absolutely true, that it depends on how fast you type in 'Word' how much letters or words F4 repeats, because normaly F4 repeats everything you have written in the last 2-4 seconds. This works still great in my Home office Word 13 -Version. Whereas no matter how fast I write, or which auto-correction options I have - in my Word 19-Version in my Office I always get only the last letter. Off course there are workarounds, but I used that F4 function very often and I hoped that someone had the same experience with the Word 2019 version and there might be a way to adjust that function . .
