When I create a new row with tab in my Quick Table, the font in the new row reverts back to Arial!

I recommend that you start with setting the default font for the document. In the Font dialog box (Ctrl+Shift+F), choose the font you want for most of the text and click Set As Default. When prompted, choose to make the change for the current document.
Once that step is done, you can format the text in table cells with a custom paragraph style, if you wish. Save the whole table as a Quick Style, as Charles suggested.
