Default How to build a custom building block template

I'm looking to build a custom building block template which contains nothing other than the company data for our documents.




At the moment I have these options in the default Word template supplied with my Office 365 install:


So the first question is how do I create a document which contains my custom building blocks? I can see the document format is a 'docx' or which is ok, but where are they stored?

The second question is how to I remove the current default entries from the list? 'normal.dotm' and 'Building Blocks.docx' need to be removed and replaced with my custom template so that the building blocks organiser contains only my custom template and not word standard blocks.
