Unhappy I can't permanently set the color for Track Changes

Both with earlier versions of MS Word and more recently 2019, I didn't have to think about track changes. It marked everything in red and whatever I typed was in red. I didn't have to do anything to get the red color. Now I am in Word 2019 on Windows 10. I had to re-install it recently because after Windows did an update, the boot logger was dead. Now, I can set the color but it is only good for that one document. I can also set text color on the home tab, but surely that shouldn't be necessary. How can I make track always use a color other than black? I never knew how to do this because it was never necessary. Thanks.
