It is the outline level that determines the bookmark level in Acrobat.
I'm assuming that you are asking about changing the outline level for the Heading 6 style. You used to be able to do this on earlier versions of Word but the more recent versions lock this so Heading 6 is locked to Outline Level 6. Do you have access to earlier version of Word to save the PDF?

Sorry for the delay and thank you all for the answers.
The idea is to make it the most automatic possibly. Not everyone will be changing the codes if they add new figures or tables. Sadly I do not have access to any other version of word. In fact we use Office 365. But I have almost done, except for the bookmarks on the pdf. Finally I end up using Heading 1 for Chapters and Appendixes and creating two multilevel list with different numbering but linked to Heading 1. The problem is that if I add new chapters it will break the original numbering, and is needed to redo it again. But I think this can work for a while. Thank you all!
