I did, after a great deal of frustration, eventually find that I could select all instances of a particular style at once by right-clicking on the style in the Styles pane, and then reapply the style to all those instances with one click.

Yes, sorry, and glad you found it. I've run into issues where doing that still fails to apply to some instances, but I never figured out why exactly. I got burned a couple times with headers missing from the TOC, but for body paragraphs and other items, that is much better.
