Your INCLUDTEXT field should be something along the lines of:
{INCLUDETEXT "C:\\Users\\jjospeh\\OneDrive\\Documents\\SPOR TS - SCOPES BY DISCIPLINE.docx" ACOUSTICS}
If you open the document on OneDrive, then select the bookmarked range and paste it into the destination document using Paste Special with the 'paste link' option, the resulting LINK field will give the correct filepath.
