We use office 365. We have a LOT of old "doc" documents and Word saves in that format when opened in that format to preserve compatibility. Is there a way to force Word to save all "doc" documents that are opened as "doc" files to "docx". I know I can change them all to docx very easily using VBA however I DON'T want dates changed on documents either. That is its important to keep the date of when a document was last accessed. Of course is someone can recommend some VBA code that will change a doc to a docx that does NOT change the date of the document that's would work as well.

Your macro could lock all the Date and SaveDate fields before saving the file as docx.

My Document Converter add-in will update the files to the latest format and retain the file creation and last modified dates (not the last accessed date) . It will also retain the original files, which is probably sensible - at least while testing.
Test it with a small number of documents, copied to a new folder, to ensure that it does what you require, before letting it loose on a larger selection of documents. It does not work with Office 2007!
