If you select the whole document via Ctrl-A, or at least all the contiguous ranges you want to update, you can apply the shading change to everything in one go, via Home|Paragraph>Borders and Shading>Shading>Fill (choose a shade) & Apply to:Text.

Thanks Paul! The issue here is that I have documents which are sometimes 30 pages long and I have to shade a few paragraphs here and there - so select all is not an option
