I have the same issue and solved it by disabling Color Filters.
Start->Settings->Ease of Access->Color Filters. Disable Color Filters. Result: I got my yellow highlight color back in Excel and Word. Not only that, the green tinge in my games, desktop, icons etc disappeared. The color gold looks just like gold, no longer dull greenish yellow.
