Wait until you see Word 2016 or later on the Mac! I expect you will be even less happy.
I have not used Word 2011. Can you display the Styles Pane? If so, that may give you some more control over what gets displayed in the drop-down. I've put most of what I know about styles in Understanding Styles in Microsoft Word.
