After you have done the wildcard replace with (\[)(*)(\]), you can search again and replace \[ with Default Paragraph Font. Repeat with \].

If picking the (special) style called Default Paragraph Font does not help (it should!), you can always specify Not Bold by repeatedly pressing Ctrl+B with the insertion point in the "Replace with" dialog box.
