First, the Ribbon interface was introduced more than ten years ago. Yes, changing to it has frustrated many an experienced Word user, but ten years? Word 2007 has the worst implementation; Word 2010 was a huge improvement.

To get to the title property...
Pizza button (Office button) > Properties > Advanced Properties > Summary (tab)
(or)
You can display the Document (Properties) Panel using the Developer Tab. (button on far right)
