If so, press Alt+F9 to toggle display of fields. This is an application-wide option and stays the way you have it until you toggle it again.
You do this once, and you do not have to press Ctrl+A first. This setting sticks and is for all Word documents you open. It is a "toggle" which means that each time you press Alt+F9 you either switch to seeing raw fields or you see what the field is supposed to display.
