You can use the named custom galleries and can also use the numbered custom galleries, but no, you cannot rename them. You can name categories within any gallery. Each built-in gallery has a separate custom gallery.

If you are sharing your building blocks you want to store them in separate templates rather than in the generic one.
Where can Building Blocks be stored?
