You can use the named custom galleries and can also use the numbered custom galleries, but no, you cannot rename them. You can name categories within any gallery. Each built-in gallery has a separate custom gallery.
If you are sharing your building blocks you want to store them in separate templates rather than in the generic one. Where can Building Blocks be stored? Building Blocks & AutoText
