The results you are getting are the result of direct formatting being applied over your normal style. Your normal style is TNR text, not Candara. The Candara was applied using direct formatting as was the Italics. Both of those direct formatting attributes are removed by the first application of "surrounding text." The Bold is removed by the next application, it was not direct formatting but in the character style "Strong."
