How can I assign a straight apostrophe to a key so I can use it in contractions (such as can't) versus using the single quote key on the keyboard that gives you an opening and closing curly single quote. I can't find a straight apostrophe in the list of symbols.

The curly quotes are the result of Word's auto-correct function replacing your straight ones. Clicking the 'undo' button immediately after Word does the curly quote thing will restore the straight quote. The alternative is to turn off the auto-correct function for smart quotes, but that affects all single and double quotes, with the result that you'll only ever get straight quotes for both.
