These are generally user options rather than something you can set in a document.
When you have a document protected for forms, the tab key will take the person to the next field. You need to let your users know this. ; Also, look into a more complex and flexible option: the UserForm (a custom dialog box). Create & Employ a Userform Create a Simple Userform
