The table is handled under the Tables tab.
The layout is handled under the Page Layout Tab. Orientation and gutter. If you are binding on the long edge, you may need different headers/footers on even and odd pages with different sizes. I think the gutter always is on the right and left edge rather than top and bottom. If that is the case, you need the headers footers. Sections / Headers and Footers in Microsoft Word 2007-2013
