How do I remove the US Dictionary?

Of course I went straight to the ribbon, found that the US Dictionary was still the preferred one, did the deed and haven't had a problem since.

All Office versions come with the same proofing tools, etc. Aside from Office Basic, that comes pre-loaded on some computers, the only difference between, say, a Home & Student version and a Professional version concerns which applications are included, not what those applications support.
