At least in WinWord, you must make use of auto macros to ensure that all documents display in the same view and zoom:

Sub AutoOpen()
ActiveWindow.View.Type = wdPrintView
ActiveWindow.View.Zoom.Percentage = 200

ActiveWindow.View.Type = wdPrintView
