Save As cause app to stop working
I have reinstalled Office 2007 after a HD crash. Since then, whenever I perform a "save as", word & excel stop working. The files are recovered, however, whenever attempting to save, the same cycle happens, i.e, the applications stop working.

Did you reformat the HDD and reinstall Windows too? Have you tried repairing the Office installation (via Word Options|Resources|Diagnose)?
