Default Word Forms

We were going to use interactive pdf forms, but encountered problems with digital signatures in Adobe, so we have to convert our forms to Word 2010.

Here's my problem: With Adobe Acrobat, you can extract data from the interactive pdf forms, and create reports. It's really fast and simple.

However, I can't seem to find that functionality in Word. I can insert form fields, but I can't send the data anywhere else for reporting. When I google "export forms data Word 2010" I get Access. I need to stick with Word and Excel.

Is there any way, using only Word and Excel, that I can create forms I can convert into reports? We need Word for the digital signatures, so it won't be possible to create the forms in Excel.
