This depends on whether you are using the new content control fields or are using legacy form fields.
See Repeating Data

With legacy form fields you give the field a name which becomes a Word bookmark. You check the option to update on exit.

Then elsewhere you put in a reference to the bookmark.

With drop down lists, you use IF fields to test for each possibility and then put the appropriate language for each possibility into your form.
