I have a document which includes my email address as a hyperlink. It used to show up on screen as the email address underlined. Now, it shows up on screen as {HYPERLINK "mail to:"}{ my_name@gmail.com"}. (I added two extra brackets because when I type it here the way it shows up in the document, it gets converted back to the way I want it to look.) This is for a resume which recipients will read as a softcopy, so I don't want {HYPERLINK "mail to:" or the ending bracket, }, to show. When I print it, the address prints like I want it to. It seems to do this for every document I open with my email address.

You have Word's field code display toggled 'on'. Pressing Alt-F9 toggles it on/off.
