Default Forms for filling in legal documents?

We have purchase and sale agreements, deeds, etc with fields (or they were called fields in WP) that we wish to be able to merge with a customer's information automatically from a form. How is this accomplished in Word 7? It's probably so simple I'm just glancing right past it.
